My wheat free, gluten free diet is going well but I know one thing for sure – if we start feeling deprived, our chances of "cheating" drastically increase. So here is an easy gluten free chocolate candy recipe that is so rich that you won't want much, but it does satisfy a craving for sweets. Another great thing is that there is no cooking because it's a freezer candy. My family loves to get small candies like M and M's or Junior Mints and freeze them so I figured this would be welcomed. And it was. Of course, most candies have no gluten but this rich goodie is definitely a gluten free candy so I feel no guilt about eating a couple of little pieces a day.
Easy Gluten Free Chocolate Candy Recipe
- ¼ cup chopped nuts: peanuts, walnuts, almond, cashews, etc.
- ¾ cup shredded coconut
- 1/3 cup cocoa powder
- ¼ teaspoon sea salt
- ¾ cup chunky nut butter
- ¼ cup melted coconut oil
- ¼ cup maple syrup (or honey or agave nectar)
- 2 teaspoons vanilla extract
I used peanuts and I left some chunks when I crunched them in my coffee grinder.
Next I added the coconut and mixed it with the peanuts in my mixing bowl.
Add the cocoa and salt.
Now, the nut butter – I used peanut butter.
Last, the coconut oil, maple syrup and vanilla extract.
Now comes the messy part … line a baking sheet or platter with either plastic wrap or wax paper. Spread out the candy with a spoon and put it in the freezer for at least an hour to harden.
When your candy is frozen, remove it from the sheet and break into small pieces. Keep it in the freezer when you're not eating it because it will get soft if you leave it out.
And there you have it – an easy gluten free chocolate candy that is appropriate for almost any eating plan. Enjoy.
