I made an awesome cilantro cranberry relish recipe two days ago and have been eating it steadily ever since. In fact, when I made it I was a bit taken aback by the amount and thought I’d end up freezing most of it before it went bad. No problem. It’s so good and tastes so great that it’s almost gone.
Of course, if you don’t like either cranberries or cilantro, you’ll think it’s horrid. Cilantro has a really, REALLY strong taste. Actually, it’s rather overpowering. In fact, the first time I ate it I actually sent my soup back in a restaurant, which is how much I disliked it. I can’t remember how I ever came to eat it again and grow to like it, but now I love the stuff. Here’s all I did to make this wonderful recipe.
Cilantro Cranberry Relish Recipe
* 1 bag of fresh cranberries
* 1 bunch of cilantro
* A few small green onions
* 2 limes
* 2/3 cup sugar – which I didn’t use
That’s it. Simply chop up the first three ingredients in a food processor, squeeze in the lime juice and add your sweetener of taste. I used 2/3 cup monk fruit sweetener and it’s plenty sweet enough.
This is one of those recipes that’s better a few hours later when the flavors have had a chance to marinate together. I like it so much that I’m going to buy multiple bags of cranberries and freeze them so that I can make this delectable stuff throughout the year.
The recipe I had also included a jalapeno pepper but I don’t like hot stuff so I didn’t use any.
Why Cilantro Cranberry Relish Will Make Your Body Sing
1. First of all, it’s low in calories. Calorie counts differ from different sources, but at least most of them are in the same ballpark.
==> Cranberries: 51 calories per cup
==> Cilantro: 10 calories per serving (how much is that? – still, it’s a very low calorie food no matter how much you eat)
==> Lime: 20 calories per fruit
==> Green onion: 5 calories per onion
==> Monk fruit: according to the container it’s 0 calories
2. All fruit and veggies are loaded with vitamins, minerals and enzymes. That includes the monk fruit which comes from a green melon named Luo Han Guo.
3. It’s alkaline so it works for anyone who is eating alkaline foods (like me).
4. It’s versatile. I’ve eaten it on salads and it could be used on breads, ice cream, yogurt, etc. Or best of all, just grab a spoon. :-)
So make your body and taste buds happy and grind up some cilantro cranberry relish. It will only take a few minutes.
